Dekada is a new restaurant located inside the Royale Parc Hotel Tagaytay. The place aims to elevate authentic Filipino dining with its interpretations of well-loved local dishes named after heroes and historical events, giving gatherings a festive patriotic mood.Dekada - Royale Parc Hotel Tagaytay (2)

The delicious crawl through the Philippines’ timeline starts with Lumpiang Palabok, a bite-sized palabok wrapped in rice paper with grilled mahi-mahi. This was inspired by Antonio Pigafetta’s first account of the Spaniards’ visit to the Philippines.

The Ensaladas de Alianza or Salads of Alliance refers to the first alliances between the Filipinos and the Spaniards.

Diners can enjoy a comforting bowl of soup in Melchora, Dekada’s version of chicken binakol named after the grand woman of the revolution, and a hearty bulalo called La Solidaridad.

The main dishes are a short history lesson on the Sons of the Revolution, which includes Del Pilar (chicken inasal), Aguinaldo (twice-cooked adobo), and Pinoy-style oven roasted chicken called Ponce.

The piece-de-resistance is named after Jose Rizal: Sizzling bulalo steak made with Tagaytay’s freshest beef.
